Head Chef
Chef Suzette Augusty​ne Morse a native of Gloucester was introduced to the culinary industry at the early age of 16; she enjoyed her career path so much that she continued her training while working for River’s Inn & Berret’s restaurants among others on her professional path. We first had the pleasure of working with her when she came on board as our sous chef at the White Dog Bistro. It was here that she first found her love for Mathews County. Next she help us put Hole in the Wall on the culinary map with Chef Heather, even then as a part-timer she was invaluable to our opening success. Now a full-time Chef with us, we expect BIG things in her future! Augustyne takes pride in her work & it shows. She is diligent and precise, even in her downtime when she enjoys creating special dietary meals and posting them online.

Meet Our
Manager
Tom Sawyer, an original Mathews County native, has been with the restaurant since its inception. He is the creative mind behind most of its specialty cocktails. He is backed with knowledge gained from attending professional bartending and mixology school. He strives to keep etiquette and culture alive in a current modern bar setting and what he brings to the table (literally and figuratively) is both friendly and inviting which extends to locals and visitors alike. He truly wants everyone to enjoy their restaurant’s experience at Hole in the Wall.
